Honey Sriracha Sauce

  • 100 ml sriracha hot sauce
  • 1 teaspoon white wine vinegar
  • 2 tablespoons Tomasu soy sauce
  • 1 teaspoon lime juice
  • 1 clove of finely chopped garlic
  • 50 ml honey
  • 150 grams cold unsalted butter

Preparation

Combine all ingredients, except the butter, in a small saucepan and slowly bring the mixture to a simmer. Remove from heat, add the cold butter, and stir well until fully melted. Let the sauce cool. This Honey Sriracha sauce is the perfect dip for your BBQ chicken wings!

Whiskey Glaze

  • 150 ml whiskey
  • 40 ml maple syrup
  • 50 g brown sugar
  • 1 pinch of cayenne pepper

Preparation

Add all ingredients to the Cast Iron Sauce Pot, stir until the sugar is dissolved, and let the mixture reduce into a light syrup.

Let the glaze cool completely before using it on your chicken wings.

Smoking the Chicken Wings

  • Generously season 1 kg of chicken wings with BRAAI – Wingman BBQ Rub.
  • Light your kamado with one fire starter, stabilize the temperature at 120°C, add an Appelwood Chunk en plaats daarna de hitteschilden.
  • Place the wings on the stainless steel grill grate and smoke them indirectly for about 1.5 hours at 120°C.

  • Remove the heat deflectors from your kamado and grill the wings over direct heat until they develop a beautiful color. (Tip: Keep a close eye on them, as the sugar in the glaze can caramelize quickly).
  • Brush the wings again with the remaining glaze and place them back on the BBQ for a few more minutes.

Serve the BBQ chicken wings with the Honey Sriracha sauce as a dip for an unforgettable taste experience!
