The difference: chunks are fist large pieces* better suited to give off smoke over a longer period of time. If you want to smoke for a long time you better use chunks. You get smoke over a long time without having to add wood.
If you want to smoke your food for more than an hour, use chunks.
*These Whisky/Oak chunks are smaller as they are made from real oak whisky barrels.
