Gozney Dome Neapolitan Arch & Flue Extension

Neapolitan pizzas are cooked at extremely high temperatures and in very short times. The oven must be fully saturated (450°C+ / 845°F) to achieve a baking time of 45-60 seconds. To create the perfect rise and leopard-spotted, charred crust on high-hydration dough, the air temperature must be exceptionally high. The arch narrows the oven’s opening, raising the air temperature and delivering ideal conditions for authentic Neapolitan pizzas.

The arch features a ceramic-coated notch in the center, allowing pizzaiolos to easily “dome” pizzas by lifting them with the turning peel into the flames or hottest areas of the oven.

Additionally, the Dome’s chimney extension channels smoke and soot out of the oven while improving airflow.

The Neapolitan Arch is specifically designed to enhance the gas-powered pizza-making experience. Please note: it is not intended for use with wood.
